This is the first video in my new series “Grab and Go Breakfast Recipes”. If you don’t have time to make breakfast in the morning, these recipes will be perfect for you. This recipe can be prepped the night before and will last in the fridge for up to two days, or you could make it for breakfast the morning in about ten minutes.
Pina Colada Fruit Salad
- 2-3 cups fresh pineapple chunks
- 2-3 bananas, sliced
- 1 lime
- 2 tablespoons dried unsweetened shredded coconut
- Place pineapple in container of choice. Top with banana slices. Squeeze lime juice over fruit. Sprinkle coconut over top.
- Enjoy within an hour, or cover and refrigerate for up to two days.
