Lately I’ve been really into steamed food served with a rich sauce on top, it’s easy and tastes good. Last week I was eating a cashew cheese sauce over everything, and this week it’s a tahini curry sauce. Instead of planning meals, I usually prep some food so that I can quickly throw a meal together. This week I cooked some red rice, cut up some kale, and roasted butternut squash and beets in preparation for the week. When dinner time comes around I just heat my food up with a little water over the stove and drizzle some sauce on top.
- ½ cup tahini
- ¾ cup water
- 1 ½ tbsp curry powder (we all have our favorite brand)
- 3 tbsp maple syrup
- 1 tsp sea salt
- 1 thumb-sized piece ginger, minced
- 3 tbsp apple cider vinegar
- Place all the ingredients in a bowl. Whisk with a fork until smooth. Eat within five days.
